1 cup of butter
1 cup of white sugar
1 cup of brown sugar
1 tsp vanilla
2 cups flour
1 tap baking soda
1 tsp salt
1 1/2 tsp cinnamon
3 cups oats
Bowl #1: Mix butter, white sugar & brown sugar. Beat eggs in one at a time. Stir in vanilla.
Bowl #2: Combine flour, baking soda, salt & cinnamon.
Combine butter mixture(bowl#1) to Dry mixture (bowl#2)
Add oats. (It will get hard to stir at this point. make sure you mix all the oats in real well)
Cover & Chill for 1 hour (Makes it much easier to work with)
Preheat over to 375 degrees
Greese cookie sheet or line with parchment paper.
Roll dough into balls. (dough will get messy and sticky as it warms up)
Flatten dough balls on cookie sheets.
Bake 8 to 10 minutes.
Adjust baking time to suit tastes. After the first or second batch I usually bake them about 6 minutes each. They come out softer(and cooked) this way.
