Santa Fe Chicken Casserole

Recipe: Santa Fe Chicken Casserole


½ bag Tyson chicken strips (any chicken strips will work)

1 can black beans/ 1 can diced tomatoes

Diced onion/ ¾ cup grated cheese

1 tub Philadelphia Santa Fe Blend Cooking Cream, divided

3 tortillas (wheat or flour)


Heat oven to 375 degrees.

Combine first 4 ingredients in a large bowl. Add ¾ cup cooking cream;

Mix lightly. Spoon 1/3 chicken mixture into a 9 inch pie plate.

Top with 1 tortilla. Half the remaining chicken mixture & ¼ cup

Cheese; put on top of first tortilla. Cover with second tortilla.

Top second tortilla with remaining chicken mixture and cheese.

Top with third tortilla. Spread remaining cooking cream and & cheese

On top of third tortilla & cover.  Bake 35 min or until heated through.

Uncover & bake an additional 5 min or until cheese is golden brown.

This recipe is good with mixed veggies mixed in or a side salad. This does tend to be a bit spicy. But so yummy!
